Recipe: Simple veggie tomato pasta

A quick and easy recipe to create a simple yet delicious pasta dish.

Ingredients

• Pasta - 300g cooked

• Vegetable oil

• Veggie sausages* - 2 cooked and chopped

• Tomato passata - 200g

• Onion - 1/2

• Red pepper - 1/4

• Frozen peas - 100g

• Basil - handful of leaves sliced

• Herbs de Provence - 1/2 tsp

• Garlic powder - 1/4 tsp

• Salt & Pepper

Optional if you're not vegan

• Cheddar cheese - grated

Instructions :

• Start by dicing the onions and chopping the red pepper in cubes.

• Put some oil in a frying pan and place it over a medium heat, add the onions and fry for 10min.

• Then add the red pepper and continue cooking for a few minutes.

• Once the red pepper has softened a bit add the garlic powder and herbs de Provence mix in then pour the passata into the pan.

• Stir occasionally and once it starts to simmer add the frozen peas, basil leaves and the veggie sausages pieces. Season with salt and pepper to taste and let it simmer for about 10min or until the peas are cooked. • Pour the sauce over the pasta and serve with some extra basil leaves and cheese.

• Frying pan

• Wooden spoon
