Recipe: Chocolate chip banana bread

Makes 1 loaf #vegetarian #veggie #snack

Ingredients :
• Butter unsalted & softened - 250g
• Muscovado sugar - 125g
• Golden caster sugar - 125g
• Eggs - 3
• Self-raising flour - 250g
• Vanilla extract - 1/4 tsp
• Hazelnuts - 50g chopped
• Bananas (very ripe) - 3 mashed
• Dark chocolate - 200g chopped into chunks
• Extra sugar to sprinkle on top

Instructions:
• Pre-heat oven to 170C/Gas 3/325F and line your loaf tin with parchment.
• Beat the butter and sugars together until it's smooth and pale.
• Add the eggs one at a time and beat, if needed add a spoonful of the flour to prevent it from separating.
• Mix in the the flour then the vanilla extract.
• Fold in the hazelnuts, the chocolate chunks and mashed bananas.
• Scoop the mixture into the tin and smooth the top. Sprinkle some sugar of the top and place in the oven to cook for 1 hour 25 minutes.
• It should have a crispy cracked top and you can check if its cooked by sticking a knife in the middle, it should come out clean apart from some melted chocolate. Remove it from the oven and leave it to cool on a cooling rack.
Equipment :
• Loaf tin 23cm x 13cm
• Baking parchment, reusable silicone parchment if possible.
• Large mixing bowl
• Large fork or electric whisk
• Scales
• Chopping board and knife
